Steps for Preparing the Avocado Cream

To prepare the delicious avocado cream, start by removing the skin and pit from the fruit. Then, in a blender place the avocado pulp, onion, salt, and juice of half a lemon and blend everything until you get a cream, then set aside.

  • Meanwhile, roll out the puff pastry and with a ring mold, cut out circles. Then place the pastry circles into tartlet molds creating edges as in the photo and prick the bottom with a fork so that no bubbles form during baking.

  • Bake at 350°F for about 20 minutes. Once the baskets are baked, remove them from the oven, let them cool, and then generously fill them with the avocado cream and garnish with a slice of salmon rolled into a rose shape. Sprinkle a bit of lemon juice also on the salmon and a drizzle of extra virgin olive oil. Arrange them on a serving dish with some salad and serve … enjoy your meal!
