Sautéed Porcini Mushrooms

Mushroom season begins, and today I received a gift of fantastic porcini mushrooms, freshly picked from the woods of our valley.

You can’t imagine our joy; we love them in any way, raw, cooked, breaded, etc.

And sautéed, they are truly delicious, savoring all their taste and aroma.

A simple and quick recipe to prepare but always conquers, thanks to the prime ingredient that is maximized in this recipe.

Mushrooms are a good source of vitamin B and fiber. They also contain several proteins. For those who are intolerant, it is recommended to consume them cooked.

Porcini mushrooms have been the most appreciated since ancient times, and even today they are highly prized.

They grow near trees, particularly near beeches and chestnuts. They are not easy to find because they are often hidden under dry leaves.

I still remember when my dad used to spend whole days in the woods searching for them and always came home with baskets full of porcini, Caesar’s mushrooms, and chanterelles. In recent years, it has unfortunately become increasingly rare to find them.

Ingredients for Preparing Sautéed Porcini Mushrooms

  • 1.1 lbs porcini mushrooms
  • 1/4 cup extra virgin olive oil
  • 2 1/2 tbsp chopped parsley
  • to taste fine salt
  • 3 cloves garlic

  • 1 Knife
  • 1 Saucepan

Steps for Preparing Sautéed Porcini Mushrooms

To prepare the delicious sautéed porcini mushrooms, start by washing them very well under running water and remove any soil or dirt using a knife.

  • Then place them on a cutting board and with a knife cut them first vertically and then horizontally to obtain cubes of medium size, or to your liking.

  • Meanwhile, in a saucepan, add the extra virgin olive oil, heat to temperature and add the garlic cloves and sauté. Once they are sautéed, remove them and add the chopped mushrooms. Then cook for about twenty minutes, for the first two minutes over high heat, then over low heat with a lid, adding salt and stirring occasionally with a wooden spoon until cooked.

  • Once cooked, add the chopped parsley

  • and serve hot… they are also excellent as a pasta seasoning… and bon appétit!

Preservation and Tips

Sautéed mushrooms can be stored in the fridge for two days.

If desired, they can also be frozen already cooked, not raw please
