  • 1 shortcrust pastry
  • 3 red onions
  • 220 g string cheese
  • q.b. fine salt
  • q.b. extra virgin olive oil
  • 1 egg yolk
  • 2 teaspoons milk

Steps for the Savory Onion Pie

  • To prepare the delicious onion pie, peel the onions and slice them thinly with a mandoline.

    Roll out the shortcrust pastry, if you want the recipe and prepare it at home you can find it by clicking HERE, on a round pan lined with parchment paper. Fill with slices of melting cheese, such as scamorza or galbanino, leaving one centimeter from the edges, place the raw onion slices on top; there is no need to sauté them in a pan, they will cook perfectly in the oven. Season with fine salt and a drizzle of extra virgin olive oil.

    In a bowl, beat an egg yolk with the milk and brush, with a kitchen brush, the edges of the shortcrust pastry. Bake at static oven at 356°F (180°C) for 35-40 minutes, or in air fryer mode at 356°F (180°C) for 20-22 minutes, until golden brown.

Storage

You can store the savory onion pie for 24 hours at room temperature or in the fridge, cut and closed in an airtight container or wrapped in plastic wrap, for three days. Before serving, heat for a few minutes in an air fryer or oven at 320°F (160°C).

You can freeze it. Let it cool completely, cut it into slices, and freeze.
