Ingredients for Rice Noodles
- 14 oz noodles
- 2 1/2 cups zucchini
- 2 cups carrots
- as needed extra virgin olive oil
- 8 prawns
- as needed fine salt
- as needed soy sauce
- 1/2 glass white wine

Steps for Preparing Rice Noodles
To prepare the vegetable and shrimp noodles, start by thoroughly washing the vegetables under running water and removing the ends
With a peeler remove the outer part of the carrots.
With a mandolin slice the carrots and zucchini into sticks on a cutting board.
Grease a pan with a drizzle of extra virgin olive oil and sauté the vegetables for 5-7 minutes turning them on each side over low heat with a wooden spoon.
Once they are sautéed but not fully cooked, salt and add the prawns, cover and cook for a few more minutes and drizzle with half a glass of white wine.
The cooking time varies depending on whether the prawns are fresh or frozen.
Meanwhile, bring to boil a pot full of salted water and blanch the noodles just the time they come to the surface.
Drain with a colander and mix them with the vegetables and prawns. Season with some extra virgin olive oil and mix gently.
If you like, you can season with soy sauce, and the noodles are ready to be served and enjoyed.
Storage for Rice Noodles
The shrimp rice noodles can be stored in the fridge for two days, closed in an airtight container or wrapped in plastic wrap.
They are also good cold, but if you want to heat them, add a little water and let them pass in the pan for a few minutes, stirring gently.
