Parmesan baskets are an easy and quick way to transform a simple appetizer into an explosion of taste and style.
Besides being delicious, they attract attention to the table. Golden and crispy, they can be filled in countless ways, with sauces like mayonnaise, tuna sauce, or yogurt and mint sauce, with Russian salad, vegetables, cheeses, and much more.
You can use either Grana Padano, for Grana baskets, or Parmigiano Reggiano.
Additionally, they are practical since they are single-serving, each person has their own, making them very easy to serve.

Steps for Preparing Parmesan Baskets
To prepare the delicious Parmesan baskets, follow the steps step by step
Heat a non-stick pan and place a piece of parchment paper on it. When the pan is hot, sprinkle about 0.7 oz of Parmesan forming an even circle, and allow it to melt completely. When it is melted and golden,
flip it over, using the parchment paper, onto a ring mold 2.4 inches or a small cup, and carefully,
remove it from the parchment paper when it is warm and soft, allowing the edges to fall downwards, so they take the shape of a basket.
Let cool for a few minutes: the wafer will harden and be ready. Repeat the procedure for the other two baskets.
Tips and Storage
Use a aged and finely grated Parmesan: this way it melts better and becomes crispy
Form the discs in a regular and not too thin manner: if you use too little cheese, the wafer might be fragile, too thin, or break when cooling
Shape the basket immediately after removing from the pan, while it is still warm and malleable: once cool, it will be rigid and impossible to shape.
If you plan to fill them with moist ingredients (raw vegetables, sauces, salads), fill them at the last minute to maintain the basket’s crispiness.
Parmesan baskets or Grana baskets can be stored in the fridge in an airtight container once cooled and will keep for up to three days.
Once filled, I recommend consuming them on the same day as the wafer loses its crispiness.
