Who doesn’t like apple cake? It’s really rare to find someone who doesn’t love this apple dessert.

There are many versions, and this one is not only good but also scenic, and it is definitely the best apple cake I’ve ever tasted!

When I served it, the wow effect was immediate! They devoured it in a heartbeat.

It’s an apple cake recipe with a filling of cooked apples and raisins, decorated with raw apple slices giving it a flower shape.

Perfect to enjoy warm with a dusting of powdered sugar, this apple cake is one of the most beloved apple cakes ever.

Ingredients for the soft apple cake

  • 3 eggs
  • 2 cups all-purpose flour
  • 1/2 cup erythritol or sugar
  • 1/4 cup vegetable oil
  • 2/3 cup plant-based milk
  • 1 tbsp baking powder
  • 4 apples
  • tablespoons erythritol or sugar
  • 1/3 cup raisins
  • 1 lemon
  • 1/2 teaspoon ground cinnamon
  • 2 apples
  • as needed honey

Steps for the soft apple cake

To prepare the apple cake recipe, start by peeling the apples. Cut them in half, remove the stem and seeds, dice them, and drizzle with the juice of a lemon

  • Soak the raisins in hot water for about ten minutes

  • Pour the diced apples into a pan

  • together with the erythritol or sugar

  • and the cinnamon and cook covered over medium-low heat for 5-6 minutes

  • until cooked. They should remain firm and not fall apart.

  • In a bowl, break the eggs and add the erythritol or sugar

  • Beat with an electric mixer until you get a frothy mixture

  • While continuously using the electric whisk, gradually add the vegetable oil

  • and the plant-based milk. I used oat milk, but you can use whatever you want

  • Then the flour and the baking powder

  • And finally, the cooked apples at room temperature and the raisins, and mix well.

  • Spread in a cake pan d. 26 lined with parchment paper

  • Cut 2 apples, or as needed, in half and then into not too thin slices

  • Decorate the dough in a spiral until you reach the center and cover it completely

  • Bake at 356 degrees Fahrenheit for about 30-35 minutes in a static oven. Before removing from the oven, do the toothpick test. You can also cook in air fryer mode at 320 degrees Fahrenheit for about 45 minutes. Check the final minutes of cooking

  • Let cool, brush the apples with honey, and decorate the edges with powdered sugar and… enjoy from Barbara

Storage

The soft apple cake keeps at room temperature under a glass dome for 3 days.

Store it in the fridge for 4-5 days wrapped in plastic wrap or in an airtight container to prevent it from absorbing odors.

Let it come to room temperature for 30 minutes before serving to regain softness.

In the freezer: slice it, wrap each slice individually with plastic wrap, and then place them in a food bag.

Thawing: at room temperature or a few minutes in the oven at 212-248 °F to make it soft.
