- 2 cups cups ricotta
- 3 eggs
- 9 tbsps tbsps corn starch
- 1/2 cup cup white cane sugar
- 1 lemon zest
- 2 cups cups fresh strawberries
- 12 blueberries
- as needed powdered sugar
- 1 packet baking powder

Steps for preparing the soft cake with strawberries and blueberries
To prepare the delicious soft cake with strawberries and blueberries, gently clean the strawberries, remove the stems, and slice them thinly. Wash the blueberries under running water and let them dry.
In a large bowl, whisk the eggs with the white cane sugar using the electric whisk until foamy. Then add the ricotta and blend it all together using the whisk. Add the corn starch, baking powder, grated lemon zest, and mix until you get a homogeneous mixture. Finally, add the chopped strawberries, keeping a handful aside to use for decoration.
Mix again and pour the batter into a 24cm springform pan lined with parchment paper and level it with a spatula. Arrange the blueberries and remaining strawberries on the surface and bake in a preheated oven at 350°F (180°C) for about 30-35 minutes or until the surface is golden and the batter is cooked. You can do the toothpick test: insert it in the center of the cake and if it comes out clean, the cake is ready.
