- 1/2 cup potato starch
- 1/2 cup erythritol or brown sugar
- 3/4 cup plain yogurt or plain kefir
- 2 eggs
- 1/4 cup extra virgin olive oil
- 1 lemon
- 1 bean vanilla bean

Steps to prepare the soft yogurt loaf cake
In a large bowl, or in a stand mixer, break the eggs and add the erythritol or brown sugar and a pinch of salt.
With a electric hand mixer, beat for a few minutes until you obtain a light and frothy mixture — a fundamental step to guarantee the cake’s softness. While beating, add the plain yogurt or kefir, pour in the extra virgin olive oil in a thin stream (this will make the batter lighter and easier to digest compared to using butter), then add the grated lemon zest and the vanilla bean or extract.
Add the potato starch.

If it’s very hot, you can refrigerate it, but remember to take it out at least 20-30 minutes before serving to bring back its softness; if it’s already glazed, make sure the glaze is completely dry before covering it.
