The soup with omelet, also known as stracciatella, has the taste of home, memories, and family. I’ve always loved it; my grandmother used to make it when I was little, and now my mom makes it for me as an adult. It’s always been one of my favorites.
It’s a very simple Abruzzese recipe with ancient origins, cooked by the elderly with the bounty of their land and animals. It’s truly very tasty and unique.
It is made with a good vegetable broth seasoned with boiled Swiss chard, eggs, and Parmesan.
It’s practically a raw omelet poured into the broth, and believe me, it’s a delight!

Ingredients for preparing stracciatella
- 1 carrot
- 1 2 cups l water
- 1 potato
- 1 onion
- 1 sprig celery
- 1 zucchini
- to taste salt
- to taste extra virgin olive oil
- 2.2 lbs Swiss chard
- 3 eggs
- 3 oz grated Parmesan cheese
- to taste fine salt
- to taste croutons

Steps for preparing stracciatella
To prepare the delicious stracciatella, we start by making the broth. So in a tall pot we pour the water and bring it to a boil. In the meantime, peel the vegetables and cut them into coarse pieces, and add to the water once it boils, along with the coarse salt, and let it cook over low heat for about 40 minutes.
Separately, wash the Swiss chard and cook it in another pot with some water for a few minutes until tender. Then drain, squeeze them vigorously to remove excess water, and chop finely with a knife.
In a bowl break the eggs and beat them with a pinch of fine salt using a fork, then add the grated cheese and finally the chopped Swiss chard and mix everything together.
Once the vegetable broth is cooked, remove the potato, carrot, onion, celery, zucchini, and onion, and over moderate heat, pour in the raw omelet made with the Swiss chard, egg, and Parmesan, and stir with a fork so that the mixture, as it cooks, breaks into many pieces. Cook for about ten minutes. Once cooked, add a drizzle of extra virgin olive oil and serve hot with croutons…enjoy your meal!
Storage and Notes
Stracciatella can be stored in the fridge for two days. Always serve it piping hot.
