Ingredients for the preparation of the stuffed zucchini roll
- 1.3 lbs zucchini
- 4 eggs
- 4 tbsp grated Parmesan cheese
- 3.5 oz spreadable cheese
- 2.8 oz cooked ham
- to taste fine salt

Steps for the preparation of the stuffed zucchini roll
To prepare the baked zucchini roll WATCH THE VIDEO RECIPE
Start by trimming the zucchini and washing them thoroughly under running water.
Pat them dry with paper towels and grate them with a coarse grater.
Take the grated zucchini in handfuls and squeeze out as much water as possible with your hands or in a clean towel.
This step is crucial to avoid a soggy base.
Transfer them to a bowl and add the eggs, salt, and Parmesan cheese, and mix well.
Line a 14×8-inch baking tray with parchment paper and spread the mixture evenly across the surface with a spatula.
Bake in a static oven at 356°F for 20-25 minutes, until the base is set and slightly golden. You can also cook it in an air fryer oven at 338°F for 18-20 minutes. Always check the cooking; it should be slightly golden.
Remove the base from the oven and let it cool for at least 10 minutes: it should become lukewarm so you can fill and roll it without breaking.
Flip the frittata onto a sheet of parchment paper and gently remove the top one (see video).
Spread an even layer of spreadable cheese over the entire surface (choose your favorite type: Philadelphia, robiola, ricotta, etc.).
Cover with slices of cooked ham.
Using the parchment paper, roll it up gently starting from the shorter side, keeping the roll tight but without breaking it.
Wrap the roll in parchment paper like a candy and let it rest in the fridge for about half an hour so that it becomes compact and easier to slice.
After resting, take it out of the fridge and slice it with a knife to the desired thickness.
You can serve the grated zucchini roll cold, at room temperature, or, if you prefer, heat it in the oven for a few minutes to enjoy it warm.

Tips and Storage
Don’t overdo it with the spreadable cheese
Adding too much might make the filling come out when you slice it. A thin layer is enough to add creaminess without being too heavy.
For a more intense flavor, mix a bit of sweet mustard, chives, or grated lemon zest with the spreadable cheese.
Store the zucchini frittata roll well wrapped in plastic wrap or in an airtight container for up to 2 days in the fridge.
Take it out about 15 minutes before serving, or heat it briefly in the oven (covered with foil to avoid drying out).
You can freeze the stuffed zucchini roll with ham and cheese, but do it without filling: freeze just the cooked base, then fill it when ready.
