- 2.2 lbs cauliflower
- 3 cups béchamel sauce
- 3.5 oz shredded mozzarella
- 3 oz fontina cheese
- to taste fine salt

Steps for the Preparation of Baked Cauliflower Gratin

Choose a fresh and firm cauliflower, with compact florets and creamy white color
Remove the outer green leaves and trim the main stem. Cut the cauliflower into florets of similar size for even cooking and rinse them thoroughly under running water.
Then bring a pot of salted water to a boil and cook the florets for 8, 10 minutes. They should be cooked but still firm.
Drain them and let them cool.
Meanwhile, dice the fontina and prepare the béchamel sauce, find the recipe HERE
When everything is ready, take an oven dish and cover it with a layer of béchamel sauce.
Pour the broccoli florets and season with shredded mozzarella and fontina.
Cover with the remaining béchamel sauce, mix, and bake at 392°F for about 30 minutes, until lightly golden, in the convenient Cecotec oven with steam and air fryer mode

Storage
You can store the cheesy cauliflower for two or three days.
Once cooled, transfer it into an airtight container or wrap it with cling film or aluminum foil and store in the fridge.
You can also freeze it.
Before consuming, let it thaw completely and reheat in the oven at 320°F for 10 minutes before serving.
