Sweet and sour carrots are a truly delicious side dish.
The combination of flavors makes them truly irresistible. The honey enhances their taste and makes them shiny during cooking.
Oven cooking gives them a perfect texture: tender inside but slightly crispy on the outside
Carrots are available all year round, making this recipe an ideal side dish in any season, both for light summer meals and to accompany richer winter dishes.
They are rich in beta-carotene, fiber, and antioxidants, which support skin health, vision, and the immune system. Balsamic vinegar has digestive properties, and honey offers a natural sweet touch with beneficial effects on metabolism.
They pair perfectly with white meat, red meat, fish, and cheese, but can also be served as an appetizer

Steps for Preparing Sweet and Sour Carrots
To prepare the delicious sweet and sour carrots, choose fresh and not too large carrots.
Rinse them under running water to remove impurities.
Peel them with a peeler and if they are large, cut them in half; otherwise, leave them whole.
Meanwhile, in a bowl, pour the balsamic vinegar, extra virgin olive oil, honey, and fine salt. Emulsify with a fork and let it rest for a few minutes.
Grease a baking tray and arrange the carrots side by side and NOT overlapping.
Season them with the emulsion obtained and add a few sprigs of thyme or rosemary for a more intense aromatic touch.

FAQ
Can I use another type of vinegar?
Yes, if you don’t have balsamic vinegar, you can use another type like apple cider vinegar or red wine vinegar, but the final taste will be slightly different. Balsamic vinegar has a natural sweetness that pairs perfectly with honey, so if you use another vinegar, you might want to add a bit more honey to balance the acidity.
Can I make this recipe without honey?
Yes, if you prefer a vegan version or don’t consume honey, you can replace it with maple syrup, agave nectar, or rice malt. These sweeteners will offer similar sweetness without altering the final taste too much.
Can I cook them in an air fryer?
Certainly. Cook at 356°F for about 20-25 minutes. If you want them crunchier, increase to 392°F for the last 5 minutes
