- 1.1 lbs Borettane onions
- 2 tbsps whole cane sugar
- 3 tbsps apple cider vinegar
- 1.35 tbsps water
- 2 tbsps butter
- to taste fine salt

Steps for Preparing Sweet and Sour Onions
To prepare the delicious sweet and sour onions, take a non-stick pan d. 24 and pour in the whole cane sugar and water. Dissolve the sugar over low heat, stirring with a wooden spoon.
Once the sugar has dissolved, add the knob of butter and let it melt. Then add the previously washed Borettane onions. Salt and cook for a few minutes until they slightly take on the color of the glaze. Add the apple cider vinegar, stir, cover, and cook for at least 30 minutes, turning them occasionally, until the onions are tender and the liquid has reduced to a thick glaze. If they dry out too much, you can add a bit of water during cooking.

Storage and Tips
Sweet and sour onions keep very well and their flavor improves over time. Once cooled, they can be transferred to an airtight container and stored in the refrigerator for two to three days
It would be ideal to prepare them the day before.
