The vegetable roll is a great healthy and naturally tasty second course. It’s a fun and different way to get kids to eat vegetables. The vegetables used come from my garden, which I naturally treat with the utmost care and without GMOs but 100% organic. For those who don’t have a garden, I suggest buying them at zero-mile markets. Remember that we are what we eat.
Vegetables are an excellent source of fiber, essential for our body, in addition to having many other beneficial properties. The consumption of vegetables is necessary in all our lunches and dinners. Raw, steamed, or sautéed in a pan, as in this case, it retains its properties.

Ingredients for preparing the vegetable roll
- 2 bell peppers
- 1 eggplant
- 3 zucchinis
- 1/2 onion
- 7 oz green beans
- to taste various dry seeds
- 1 egg yolk
- 1 1/2 cups type 1 flour
- 1/4 cup cold water
- 1/4 cup corn oil
- to taste salt
- 1 tsp baking powder for savory

- 1 Plastic wrap
- 1 Parchment paper
- 1 Baking sheet
- 1 Pastry wheel

Steps for preparing the vegetable roll
Start by taking a bowl and adding all the ingredients. Then knead until you get a nice homogeneous dough. Then wrap it in plastic wrap and let it rest in the fridge for 30 minutes.
In the meantime, clean and cut the vegetables into pieces. Then take a pan, add a drizzle of extra virgin olive oil, then the chopped vegetables, then the salt, and bring to half-cooked. Finally, let it cool.
In the meantime, take the dough and roll it out on a pastry board, previously floured, with the rolling pin and give it a rectangular shape.
Then, with the pastry wheel, cut the 2 ends into strips, as shown in the photo, after having placed the filling in the center of the pastry. Then wrap the filling with the strips
Subsequently brush the surface with an egg yolk and finally add the various dry seeds. Finish by baking at 356°F for about half an hour.
Once ready, let it cool and finally we can serve it… enjoy your tasting!
