Ingredients for preparing the vegetarian zucchini skewer

  • 4 dark zucchinis
  • 9 oz mild provolone cheese
  • to taste parsley
  • 2 tbsp extra virgin olive oil
  • to taste salt

Steps for preparing the vegetarian zucchini skewer

To prepare the tasty vegetarian zucchini skewers, start by washing them well under water, then remove the ends and peel them using a vegetable peeler.

  • Then, using a mandoline slice them, see photo, and dry them individually with paper towel.

  • Meanwhile, take a grill pan and heat it well. When it’s hot, cook the zucchinis for a few minutes, turning them once on each side.

    While they are cooking, take a cutting board and a kitchen knife and cut the cheese into cubes. Adjust the size according to the size of the zucchini slice.

  • After cooking the zucchinis, place them on the cutting board and stuff each one with a piece of cheese positioned as in the photo. Then roll and skewer the roll-up onto a wooden skewer. And so on until completion.

  • Once the skewers are prepared, heat them for 2-3 minutes at 338°F, in the air fryer, or until the cheese slightly melts. Meanwhile, in a bowl, add the extra virgin olive oil and previously chopped parsley, and lastly the salt. Then mix with a fork and set aside.

  • When the skewers are ready, brush them with the oil and parsley dressing using a kitchen brush. Finally, our skewers are ready to be served… enjoy your meal!

Tips and Notes

Zucchini skewers are also great served cold. You can store them in the fridge for two days.
