- 2.2 lbs zucchini
- 1 1/2 cups grated mozzarella
- 1 1/2 cups grated scamorza
- 1/2 cup grated parmesan
- 5 slices cooked ham
- to taste fine salt
- to taste extra virgin olive oil

Steps for Preparing the White Zucchini Parmesan without Precooking
To prepare the delicious white zucchini parmesan without precooking, start by thoroughly washing the zucchini. Then dry them with paper towels and slice them, not too thin, using the mandoline slicer. Slice them evenly to ensure even cooking.
Then lay them on a rack and salt each one, allowing them to rest for about thirty minutes so they lose water. After the resting time, pat each slice dry again with paper towels.
Next, grease a baking dish, I used an oval one, but you can use arectangular one. Layer the zucchini to cover the base and top with the mix of grated mozzarella and scamorza, grated parmesan, and the cooked ham, which should cover them entirely, so adjust the number of slices accordingly.
Make another identical layer, until you achieve three layers. On the last one, add only the cheeses without the cooked ham. Bake at 356°F for about half an hour or until golden brown. In an air fryer, cook at 356°F for 15-17 minutes. See recipe video.
