Zucchini and Salmon Carpaccio, fresh, quick and impressive

Zucchini and salmon carpaccio is the perfect dish when you have little time and want to impress.

You don’t need to turn on the stove, and you can prepare it in just a few minutes. It’s nutritious and can even be a complete meal.

Just slice, season, and plate.

Raw zucchini adds freshness and crunchiness, the salmon adds saltiness while the lemon ties everything together balancing the flavors.

  • 3.5 oz smoked salmon
  • 1 zucchini
  • 1/2 lemon
  • 2 tbsp extra virgin olive oil
  • to taste fine salt
  • to taste black sesame seeds

Steps for preparing zucchini and salmon carpaccio

To prepare the delicious zucchini and salmon carpaccio, start by thoroughly washing the zucchini under water and removing the ends with a knife.

Slice them thinly with a mandoline and arrange them on a serving plate

Prepare an emulsion with extra virgin olive oil, lemon juice, and a pinch of salt. Use very little salt or even wait to salt at the end. The lemon already softens the pulp, and excess salt may release too much water, making the dish watery.

Season the zucchini with part of the emulsion and let them rest for about fifteen minutes so they can absorb the flavors.

After the waiting time, add the smoked salmon sliced, and drizzle it with the remaining dressing and a sprinkle of black sesame seeds, which add, in addition to fatty acids and proteins, an elegant and modern visual contrast to the dish, enhancing its presentation

Add some basil or mint leaves to make it fresher.

The zucchini and salmon carpaccio is ready to be served and enjoyed.

Storage and Tips

You can add a pinch of pink pepper if you like.

The carpaccio already seasoned can be stored for up to 1 day in the refrigerator, well sealed in an airtight container.
