Ingredients for preparing the zucchini cake
- 1.3 lbs zucchini
- 2 eggs
- 5.3 oz stracchino
- 1/2 cup type 1 flour
- 1/2 packet instant yeast for savory preparations
- 2 tbsps grated Parmesan
- to taste salt

Steps for preparing the zucchini cake
To prepare the tasty zucchini cake, start by cleaning the vegetables by removing the ends and washing them thoroughly.
Next, add the flour, then the Parmesan, and finally the instant yeast for savory preparations, stirring continuously until obtaining a homogeneous mixture.
At this point, incorporate the zucchinis that were set aside and, with a kitchen spatula, mix well with the batter. Finally, grease a springform pan of 24 cm diameter or line it with some parchment paper, then pour our mixture in. Level it evenly and bake at 356°F for about 30 minutes in a static oven, while in air fryer mode at 356°F for 12-15 minutes or until golden brown.
Once cooked, remove from the oven, let it cool, and serve… enjoy your meal!
Storage and Notes
The zucchini cake is also excellent cold and can be stored in the refrigerator for two days.
