Zucchini Puff Pastry Bundle

The zucchini puff pastry bundle is an easy, quick, rich, and truly delicious recipe.

I don’t know about you, but these days I have little appetite due to the heat, so I try to focus on dishes that stimulate it. Also, to avoid spending much time at the stove, I go for recipes that serve as a complete meal, just like this bundle.

Of course, like in almost every one of my recipes, vegetables are a must, giving that extra touch of flavor and texture; in this case, it makes the dish less dry and lighter.

With a puff pastry at hand, it’s easy to make great recipes.

Today I want to start telling you a bit about myself, beginning from when I was little, leading up to today.

When I was little, I lived in a semi-detached house in the countryside, surrounded by greenery. My grandparents and aunt lived upstairs, and I lived downstairs with my parents and brother. My parents were floriculturists, growing carnations and roses, working a lot, so I grew up with my grandparents to whom I was very attached. My grandmother was the classic elderly lady with long gray hair she wore in a bun; she was so sweet. One of the most vivid memories I have is that she loved listening to mass. But, in her last years, she passed away when I was only 12 years old. Since she couldn’t go to church, I would go to mass, take the leaflet with the day’s liturgy written on it, and when I got home, I would read it to her, and she was so happy.

The night before she passed, she was very ill, and I remember promising her I would take her out to the garden the next day, something she hadn’t done in a while, but unfortunately, I could never keep that promise.

Ingredients for preparing the zucchini puff pastry bundle

  • 2 zucchini
  • 1 rectangular puff pastry
  • 3 slices cooked ham
  • 4 slices melted cheese slices
  • 1 mozzarella
  • 1.75 oz grated Parmesan cheese
  • to taste salt
  • to taste extra virgin olive oil
  • 1 egg yolk
  • to taste sesame seeds

Steps for preparing the zucchini puff pastry bundle

To prepare the tasty zucchini puff pastry bundle, we start by cleaning the zucchini, removing the ends, and washing them well under running water. Then, take a cutting board and with a kitchen knife , cut the zucchini into slices.

  • Next, in a non-stick pan, add a drizzle of extra virgin olive oil, heat it up, then add the sliced zucchini. Cook for about 10 minutes, with the lid on, turning them over two or three times, and add salt.
    Meanwhile, lay out the puff pastry, equipped with parchment paper, horizontally, and start filling only one half. First, fill with the slices of cooked ham. I used three slices, but it depends on the size of the slices; they should completely cover the half, leaving the edges uncovered to close later. Then, add the cheese slices.

  • Once the zucchini is cooked, let them cool for about ten minutes, then spread them over the cheese slices. Next, add the grated Parmesan and finally the mozzarella slices.

  • At this point, cover the filling with the other half of the puff pastry, using the parchment paper to help, and with a fork, seal the edges of the pastry well, as shown in the photo, so that during cooking, the cheese does not leak out.

  • Then, in an espresso cup, place the egg yolk and beat it well with a fork. So, with a kitchen brush, brush the surface of the bundle and finish by sprinkling with sesame seeds.

  • Finally, bake in a static oven at 356°F for about 30-35 minutes until golden brown. AIR FRYER MODE 20 minutes at 356°F. After the cooking time, take it out of the oven, let it cool slightly, divide it into equal parts, and finally serve… enjoy your meal!!

Notes and Tips

The bundle can be stored in the fridge for two days, and I recommend reheating it slightly before serving.
