Steps for Preparing the Zucchini Roll

Choose fresh, medium-sized zucchini, Wash them thoroughly under running water and pat them dry with paper towels.
With a mandoline slicer, slice the zucchini thinly lengthwise, aiming for uniform thickness slices to ensure even cooking.
Line a baking tray with parchment paper and cover the surface with breadcrumbs and a drizzle of extra virgin olive oil, see video. Arrange the zucchini slices to create a rectangle. The slices should overlap slightly to prevent the filling from leaking out.
Bake for about ten minutes at 428°F in the oven or in the air fryer for 5 minutes at 392°F
Once cooked, season with salt and fill with slices of cooked ham and smoked mozzarella slices. Using the parchment paper, begin to roll everything from the longer side, trying to keep the roll compact. This step requires delicacy to avoid breaking the zucchini.
Tightly secure it and return to the hot oven for another 5 minutes or in the air fryer for 2 minutes at 356°F
This way, the cheese will melt, creating a creamy heart.
Let it rest at room temperature for about half an hour. This resting time allows the roll to compact and the flavors to blend.
