The autumn side dish is so called because it is made with vegetables typical of this period: pumpkin, mushrooms, leeks, and the addition of potatoes 🙂
Autumn has just begun, and the days are still warm, perhaps a bit too much for this time of year.
In the morning, the air is fresh, but as the sun comes out, the air becomes mild and then warm.
I can’t complain because the weather is still nice, which encourages lovely walks both towards the sea and in the countryside or mountains.
Yesterday, I bought the first pumpkin of the season and immediately used it to prepare this tasty side dish.
The pumpkin I love most is the Mantuan one because it is tastier, even though it’s harder to cut, but in the end, it’s worth it 😉
However, if you don’t have a Mantuan pumpkin, you can also use the softer one.
I also added some potatoes, leeks, and dried porcini mushrooms.
If you don’t have dried mushrooms, you can use fresh ones.
It’s a side dish that can be paired with cheeses or meat mains.

Ingredients for the Autumn Side Dish
- 1.76 lbs pumpkin
- 14 oz potatoes
- 1 leek
- 1.76 oz dried porcini mushrooms
- 2 tbsps extra virgin olive oil
- 1 clove garlic
- to taste salt
- to taste pepper
- 1 sprig rosemary
Tools
- 1 Pan
- 1 Bowl
- 1 Knife
- 1 Ladle
- 1 Wooden Spoon
Steps for the Autumn Side Dish
Soften the dried mushrooms by soaking them in cold water for about 30 minutes.
Clean the pumpkin, leeks, and potatoes.
Cut the vegetables into chunks.
In a pan, add the garlic clove and olive oil.
Let it brown for a minute, (if you prefer, remove the garlic) and add the chopped vegetables.
If necessary, add a little hot water.
Cook for about 10 minutes, add the well-drained dried mushrooms, rosemary, and continue cooking for another 10 minutes.
Add salt and pepper to taste.
Turn off and serve the autumn side dish immediately.
