Baked Purple Potatoes

Baked purple potatoes are an ideal side dish to accompany both meat and fish dishes.

Purple potatoes are a variety originating from South America and belong to the same family as white potatoes.

They have a purple skin and flesh and have a distinctive flavor similar to hazelnut and the smell reminiscent of chestnut.

Once they were difficult to buy, now you can find them in supermarkets or well-stocked greengrocers.

Purple potatoes are rich in many benefits for the body: they have a slightly lower glycemic index than classic potatoes thanks to the presence of polyphenols. They are rich in antioxidants, improve blood pressure, and reduce the risk of cancer.

In the kitchen, they are widely used: they are used for baking, pan-cooking, making gnocchi, puree, etc.

I bought them for the first time and immediately tried them in the oven.

They are very good and from now on I will make them often.

Ingredients for Baked Purple Potatoes

  • 1.1 lbs purple potatoes
  • 1 onion
  • 1 drizzle extra virgin olive oil
  • to taste salt
  • to taste pepper

Tools

  • 1 Baking Tray
  • 1 Knife
  • 1 Spoon

Steps for Baked Purple Potatoes

  • Peel the potatoes and after washing them under cold tap water, cut them into chunks.

    Place them in a baking tray with a little water, adding the sliced onion, oil, salt, and pepper.

    Preheat the oven to 392°F in fan mode and bake the purple potatoes for 50-60 minutes, turning them halfway through.

    Baked purple potatoes are also good cold.
