The baked radicchio is a quick and easy side dish to prepare 🙂
The week started with good weather 😉 finally after much rain a little sunshine.
Oh yes, these are beautiful sunny days, perfect for staying outdoors: during the day the temperatures are warm, only in the morning and evening it is cooler.
This morning after running some errands, I did some shopping before heading home and bought some vegetables and fruits.
Once home, I prepared lunch: as a first course I cooked pasta with cauliflower and as a side dish baked radicchio, and I accompanied it with some turkey slices.
Besides pairing it with meat, it can also be served with fish-based dishes.
To make it more flavorful, you can add some pepper.
I love radicchio, not only with tomatoes but also in main courses and even in savory pies.
This time I wanted to cook it simply: just seasoned with oil and salt.
A tip: if you do not like the bitter taste of radicchio, you can soak it in water with white wine vinegar for 30 minutes before cooking.

Ingredients for Baked Radicchio
- 28 oz radicchio
- 2 tbsps extra virgin olive oil
- to taste salt
Tools
- 1 Baking pan
- 1 Knife
- 1 Parchment paper
Steps for Baked Radicchio
Wash the radicchio, dry it with a cloth, and cut it up.
Line a baking pan with parchment paper, place the radicchio leaves on it, and drizzle with oil and salt to taste.
Preheat the oven to 356°F (static mode) and bake the radicchio for about 20 minutes, turning it often.
Serve immediately.
