Baked sardines are a very tasty main course suitable to cook at any time.

Sardines are a type of inexpensive blue fish, one of the most commonly caught in our Mediterranean and are among the cheapest.

In cooking, they are used in main courses, especially to dress pasta, but they are also used to make excellent main courses.

Have you ever tried them baked? I chose to cook them this way by seasoning them with a mixture of bread and grated cheese, cherry tomatoes, and pine nuts.

These are simple ingredients that make them very appetizing 🙂 and they will attract you a lot.

They are suitable to cook even in these hot days because they are quick to prepare and will tease your palate.

If you’re in a hurry, you can use frozen sardines that are already cleaned.

Ingredients for the baked sardines

  • 36 sardines
  • 1 cup breadcrumbs
  • 1/2 cup Grana Padano cheese, grated
  • 1/2 cup pine nuts
  • 1 clove garlic
  • 10 cherry tomatoes
  • 1/2 cup extra virgin olive oil (+ 2 tbsps to grease the pan)
  • 1 bunch parsley
  • to taste oregano

  • 1 Bowl
  • 1 Baking dish
  • 1 Mezzaluna
  • 1 Knife
  • 1 Spoon

Steps for the baked sardines

  • Clean the sardines by removing the head under cold tap water, widen the opening between the head and the belly to remove the entrails. Open the sardines like a book and extract the central bone by pulling toward the tail.

    Once all the sardines are cleaned, prepare the breading.

    In a bowl, pour the breadcrumbs and grated cheese, add the chopped garlic and parsley, chopped tomatoes, and oil. Mix the mixture.

    Take a rectangular baking dish (mine was 15″ x 12″), grease it with a little oil, lay a layer of sardines, cover with a little mixture, and sprinkle some pine nuts and oregano.

    Make a second layer of sardines, cover with the remaining mixture adding the remaining pine nuts and oregano to taste.

  • Preheat the oven to 400°F in fan mode and bake the sardines for about 20 minutes or until golden.

    Serve them immediately while hot.
