Black rice with asparagus and shrimp is a very good first course that I prepared at the last minute 🙂
I still had a bunch of asparagus to use up and some black rice leftover from last night, I just added some shrimp and it turned out to be a very delicious first course.
It’s a first course rich in many benefits for our body.
Black rice is rich in antioxidants, vitamin B, minerals like iron, selenium, potassium, magnesium, and calcium. It contains insoluble fibers that not only reduce hunger pangs during the day but also stabilize blood sugar, making it suitable for those with diabetes.
In fact, besides regular white and brown rice, I also consume black rice.
There are many recipes where it is widely used: I often cook it with vegetables but also with fish.
This time I wanted to use both ingredients, so here is my recipe 😀

Ingredients for Black Rice with Asparagus and Shrimp
- 1 3/4 cups black rice
- 1.1 lbs asparagus
- 10.5 oz shrimp
- 1 white onion
- 2 tbsps extra virgin olive oil
- to taste salt
Tools
- 1 Frying pan
- 1 Pot
- 1 Knife
- 1 Wooden spoon
- 1 Ladle
Steps for Black Rice with Asparagus and Shrimp
Clean the asparagus by removing the tougher part.
Wash them and cut them into pieces.
In a frying pan, pour the oil and chopped onion and sauté for a few minutes.
Add the asparagus with a little water and let cook for about 10 minutes.
Add the shrimp and cook for a few minutes, stirring frequently with a spoon.
In the meantime, cook the rice in a pot with plenty of salted water, leaving it al dente.
Drain the rice well and add it to the pan with the asparagus and shrimp along with the salt.
Stir for a few minutes, turn off the heat, and serve the black rice with asparagus and shrimp hot.
