Chicken with eggplants and bell peppers is a very tasty main course that I often prepare during this period 🙂
In summer, eggplants and bell peppers are at their best: they are a seasonal vegetable, although they are now available all year round, but I prefer to eat seasonal vegetables.
Besides chicken with potatoes, this is one of my favorite dishes.
It can be cooked both in a pan and in the oven; here I’ve baked it.
For the chicken, I used thighs as they are the most meaty and fleshy.
Since the temperatures have been a bit cooler these days, I felt like cooking something more flavorful, so I decided to make this dish 😀
I used red bell peppers, but you can also use yellow or green ones.
If you like, you can also add some olives to taste.

Ingredients for Chicken with Eggplants and Bell Peppers
- 8 chicken thighs
- 2 eggplants
- 2 bell peppers
- 1 onion
- 1 drizzle extra virgin olive oil
- to taste salt
- to taste pepper
- to taste herbs
Tools
- 1 Baking dish
- 1 Knife
- 1 Glass
Steps for Chicken with Eggplants and Bell Peppers
Take a baking dish, place the chicken thighs, onion, eggplants, and bell peppers evenly spread. Add the oil, salt, pepper, and herbs. Pour about half a glass of water.
Preheat the oven to 392°F in convection mode and bake the chicken thighs for about an hour and a half or until golden brown.
Turn the chicken thighs halfway through cooking. If it dries out too much, add a little hot water.
Serve immediately.
