Chicken with Olives and Capers

Chicken with olives and capers is a tasty main course that I really enjoyed 😉

I usually love chicken with potatoes: a real delight, and I often enjoy it that way.

On Saturday, I bought some chicken thighs and thought about cooking it again with potatoes, but then I preferred to change it up by adding olives and capers instead.

I must say that even this way, it’s not bad at all 😀

Certainly, it’s a classic main dish that you probably already know, but since I hadn’t published the recipe yet, here I am with my version.

In addition to olives and capers, I also added tomatoes and used aromatic herbs like marjoram.

If you don’t have marjoram, you can also use thyme or oregano.

It’s a tasty main dish that I cooked in a saucepan.

You can also bake it: in this case, I recommend adding the olives and capers towards the end of cooking.

If you’re serving it to kids, you can use water instead of wine.

Ingredients for Chicken with Olives and Capers

  • 8 chicken thighs
  • 4 tomatoes
  • 1 onion
  • 5.3 oz pitted olives
  • 3.5 oz pickled capers
  • 1.8 oz white wine
  • 1 tablespoon extra virgin olive oil
  • to taste salt
  • to taste marjoram

  • 1 Saucepan
  • 1 Knife
  • 1 Wooden spoon
  • 1 Ladle

Steps for Chicken with Olives and Capers

  • In a saucepan, pour the oil and the thinly sliced onion.

    Turn on the heat, cover with a lid, and after a few minutes add the chopped tomatoes, continue cooking for about 10 minutes, stirring occasionally with a wooden spoon.

    Add the chicken thighs after washing them and the wine.

    After 5 minutes, add the olives, capers, and marjoram.

  • After 10 – 15 minutes, turn the chicken thighs, and if necessary, add a little hot water.
    After another 10 – 15 minutes, adjust the salt and turn off the heat.
    If desired, sprinkle more marjoram and serve immediately.
