Cod with onions is a light main course that everyone will like.
This morning I went to the beach since I live nearby 🙂 and I really relaxed.
It’s a beautiful sunny day here, and I guess you’re a bit jealous 😉
The holidays are far away, so every now and then, when I can, I take the opportunity to enjoy some rest in these magnificent places.
Once back home, I wanted to prepare a fish main dish.
I had just bought some cod, and instead of baking it, I cooked it in a pan adding some onions.
To make it tastier during cooking, you can also sprinkle a little vinegar.
It’s a light second course ideal in this hot period.
In summer, I often cook it, and other times instead of onions, I use eggplants, or bell peppers, or potatoes, or mixed vegetables.
It takes little time to prepare, and generally, everyone likes it.
To make it even lighter, I didn’t use oil to better enjoy its flavor.

Ingredients for Cod with Onions
- 1.32 lbs cod fillets
- 2 White onions
- 1 drizzle extra virgin olive oil
- to taste salt
- to taste pepper
Tools
- 1 Pan
- 1 Knife
- 1 Wooden spoon
Preparation of Cod with Onions
Wash the cod fillets.
Heat a pan with a drizzle of oil, add the sliced onions with a little water and cook until they are tender.
Place the cod fillets on top and cook for about 3 minutes.
Turn them over and let them cook for another 3 minutes.
Add salt and pepper to taste.
Cooking time varies depending on the thickness of the fish.
Mine were thinly sliced cod fillets.
