The Harlequin tart is a colorful tart reminiscent of the Harlequin costume.
Since we are in the carnival period, it might be the perfect time to prepare it 😉
The version I present to you is made with a shortcrust pastry without butter and eggs and filled with strawberry, apricot jams, and pistachio cream.
It’s a delicious yet light tart, so you won’t feel guilty if you eat a little more than usual.
I prepared it the other day and enjoyed it for breakfast and as a snack, and it was gone in no time.
If you don’t have strawberry jam, you can use cherry jam, and instead of apricot, you can use mandarin jam.
The pistachio cream, however, is store-bought.
It’s suitable for both adults and children 🙂

Ingredients for the Harlequin Tart
- 4 cups all-purpose flour
- 2/3 cup sugar
- 1/2 cup vegetable oil
- 1/2 cup water
- lemon zest (grated)
- 3/8 cup apricot jam
- 3/8 cup strawberry jam
- 3/8 cup pistachio cream

- 1 Rolling pin
- 1 Pastry wheel
- 1 Teaspoon
- 1 Pie pan
- 1 Parchment paper
- 1 Plastic wrap
Steps for the Harlequin Tart
On the table, pour the flour, sugar, oil, water, and grated lemon zest.
Quickly knead the dough with your hands to form a ball.
Wrap it in plastic wrap and store it in the fridge for at least an hour.
Line a pie pan with parchment paper and place a little more than half of the dough previously rolled out with a rolling pin.
With the remaining dough, make strips to apply on the surface.
Pour into the gaps, alternating the flavors with strawberry, apricot jams, and the pistachio cream.
Preheat the oven to 350°F in static mode and bake the Harlequin tart for about 40 minutes or until it lightly colors.
