Ligurian Stuffed Onions

Ligurian stuffed onions are another specialty of stuffed vegetables commonly prepared here 🙂

I like onions in any form and often use them in first courses, main dishes, side dishes, and even savory pies, plus I adore them baked and especially stuffed.

To make Ligurian stuffed onions, boiled potatoes and mortadella are used.

It’s an economical recipe made with simple ingredients that are usually always on hand.

In Liguria, stuffed vegetables are widely used and are especially prepared in summer when eggplants, peppers, zucchinis, etc., are available.

However, onions are used year-round, so I stuff them even in winter.

They are tasty and appetizing to enjoy as is or can be paired with meat or fish.

I used white onions, but golden onions work well too.

Instead of mortadella, you can use cooked ham.

Ingredients for Ligurian Stuffed Onions

  • 5 white onions
  • 1.1 lbs potatoes
  • 1 egg
  • 3.5 oz mortadella
  • 2.8 oz grated Parmesan cheese
  • to taste breadcrumbs
  • to taste marjoram
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps for Ligurian Stuffed Onions

  • Peel the onions and cut them in half.

    Rinse them and remove the small and broken pieces, setting them aside.

    Peel the potatoes and cook them in a pot with water for 20 – 30 minutes. Mash them with a fork or a potato masher.

    In a blender, place the small and broken parts of the onions, the mortadella, and blend.

    Pour the mixture into a bowl, then add the mashed potatoes, grated Parmesan cheese, egg, salt, pepper, and marjoram.

    Fill the onions with some filling and place them in a baking tray greased with oil or lined with parchment paper. Sprinkle the surface with breadcrumbs and drizzle with a bit of oil.

  • Preheat the oven to 392°F in fan mode and bake the stuffed onions for about 30 – 40 minutes. They should be soft.

    Enjoy them hot, warm, or cold.
