Pancakes with Strawberries

Pancakes with strawberries are sweet fritters that are consumed at breakfast 🙂

They are usually garnished with maple syrup, but you can also use jam, fresh fruit, or chocolate.

There are different versions: with eggs and butter, but also without eggs, butter, and yeast.

I present my version without eggs and butter and instead of maple syrup I used honey and fresh fruit 😀

These days the heat is noticeable and at breakfast, I have little appetite, I almost skip it, but experts say you shouldn’t because it gives us the right amount of energy for the whole day.

Since I wanted to prepare something different to whet my appetite, I thought of preparing pancakes with fresh strawberries.

They are excellent for breakfast but not only, if desired, they can also be enjoyed as a snack.

If you are lactose intolerant, you can use plant-based milk and you can replace the lemon zest with vanilla, orange, or rum flavor.

If you use a large pan, you can cook more than one pancake in the same pan.

Ingredients for pancakes with strawberries

  • 1 3/4 cups all-purpose flour
  • 1 1/4 cups milk
  • 2 tbsps sugar
  • 2 tbsps vegetable oil
  • 1/2 packet baking powder
  • 1 grated lemon zest
  • to taste extra virgin olive oil
  • to taste honey
  • to taste strawberries
  • to taste lemon juice

Steps for pancakes with strawberries

  • In a bowl, pour the milk, sugar, and oil. Mix with a whisk and add the flour, baking powder, and grated lemon zest.

    Continue mixing to avoid lumps.

    Heat a non-stick pan with a little oil and pour 2 tablespoons of batter into the center of the pan and cook for 2 – 3 minutes per side until the pancakes are golden.

    Continue this way to make the other pancakes.

    Garnish the pancakes with honey and sliced strawberries seasoned with lemon juice.

    The pancakes are ready to be enjoyed.

    The pancakes can be stored in a food bag for 2 – 3 days in the fridge.

    Before serving, they can be reheated in a pan and garnished at the moment.
