Pici with Cherry Tomatoes and Ricotta

Pici with cherry tomatoes and ricotta is a creamy and inviting first course 🙂

Pici are a typical Tuscan pasta similar to spaghetti but thicker and are made with flour, water, and oil.

A dear friend of mine spent a few days in Tuscany and once she returned, she came to visit me, bringing a package of pici.

This type of pasta is usually cooked with aglione, but since I didn’t have it, I used cherry tomatoes and ricotta 😀

Yes, it’s a dish I invented, but in the end, it was very much liked, and now I want to propose it to you to try.

Even though it’s hot these days and you don’t feel like cooking much, I don’t give up on a first course, especially when it’s simple to make and very tasty.

So today, I made it for lunch, and since I wasn’t very hungry, it piqued my interest and encouraged me to eat.

Ingredients for Pici with Cherry Tomatoes and Ricotta

  • 14 oz pici
  • 10 1/2 oz cherry tomatoes
  • 7 oz ricotta
  • 1 clove garlic
  • 1 tbsp extra virgin olive oil
  • to taste salt
  • to taste pepper

  • 1 Spoon
  • 1 Knife

Steps for Pici with Cherry Tomatoes and Ricotta

  • Bring a pot of salted water to a boil and cook the pasta for about 20 minutes or until almost tender.

    In a large pan, heat a tablespoon of oil with the minced garlic, then add the chopped cherry tomatoes with a ladle of water. After a few minutes, add the ricotta, salt, pepper, and stir everything with a spoon.

    Finally, add the pasta and continue to stir until all the ingredients are blended.

    Serve immediately on individual plates and enjoy your meal!!!
