Stuffed Eggplants with Tuna

Stuffed eggplants with tuna are an appetizer or a side dish suitable for this period 🙂

After the unstable weather of the past few days, good weather is returning and temperatures will tend to rise. Let’s hope it’s not too muggy, otherwise, the heat becomes unbearable.

In summer, I often buy eggplants and cook them in many ways: in main and second courses, savory pies, stews, or they are stuffed.

I always use different ingredients for the filling and usually use what’s available.

Eggplants can be filled with what we like most: with meat, vegetables, or cheese.

Today I tried them with tuna and added some tomatoes. I used natural tuna, but those who prefer can also use the one with oil, and in that case, it is not necessary to add oil to the filling.

They are tasty, and I served them with turkey patties.

Ingredients for Stuffed Eggplants with Tuna

  • 4 eggplants
  • q.b. eggplant pulp
  • 12.7 oz natural tuna
  • 10.6 oz tomatoes
  • 2.8 oz grated cheese
  • 2 tablespoons extra virgin olive oil
  • q.b. salt
  • q.b. pepper
  • q.b. oregano

  • 1 Baking tray
  • 1 Knife
  • 1 Fork
  • 1 Teaspoon
  • 1 Spoon
  • 1 Parchment paper

Steps for Stuffed Eggplants with Tuna

  • Wash the eggplants, cut them in half, and place them on a baking tray covered with parchment paper.

    Preheat the oven to 392°F in fan mode and bake the eggplants for about 20 – 30 minutes.

    Let them cool. Use a teaspoon to remove the pulp, mash it with a fork or blend it, and pour it into a bowl.

    Add the chopped tomatoes, shredded tuna, grated cheese, oil, salt, pepper, and oregano.

    Stir well with a spoon.

    Spoon some mixture inside each eggplant half and place them in a baking tray covered with parchment paper.

  • Preheat the oven to 392°F in fan mode and bake the stuffed eggplants with tuna for about 30 minutes.
    They are good both warm and cold.
