Whole-wheat pizza with onions and tuna – sourdough

Whole-wheat pizza with onions and tuna is a leavened bread that whets the appetite 😉

A few days ago I made it because I was craving pizza and enjoyed it for lunch.

I had some whole-wheat flour to use up and quite a few onions.

I stuffed some onions and used the remaining three as a topping together with tomato sauce and tuna.

I used yellow onions, but you can also use white or red onions.

For the tuna I used tuna in water, but you can also use tuna in olive oil — if you do, remember to drain it well or the pizza will be too oily.

I used a large baking tray; if you use a 9 1/2 – 10 1/4 in pan, halve the quantities.

Now all that remains is to prepare it — enjoy!!!

Ingredients for whole-wheat pizza with onions and tuna

  • 4 1/4 cups whole-wheat flour
  • 3.5 oz sourdough starter (or about 0.44 oz fresh yeast or about 1 tsp instant dry yeast)
  • 1 cup water
  • 3 tbsp extra-virgin olive oil (+ more to grease hands and the dough)
  • 1/2 tsp salt
  • 2/3 cup tomato sauce
  • 3 yellow onions
  • 5.6 oz tuna in water
  • 1 drizzle extra-virgin olive oil (+ 1 tablespoon to dress the sauce)
  • to taste salt
  • to taste oregano

Steps for whole-wheat pizza with onions and tuna

  • Put the flour and the sourdough starter in a bowl.

    In a small saucepan pour the water with the oil and salt. Heat for a few seconds and pour over the flour and starter mixture.

    Work the dough with your hands on the work surface and form a soft ball.

    Let it rise covered in a warm place overnight.

    In a frying pan heat a drizzle of oil, add the sliced onions and cook until soft. If necessary add a little hot water.

    Season the tomato sauce with oil, salt and oregano.

    Line a baking tray with parchment paper, pour a little oil on the dough, work it a little and stretch it with oiled hands.

    Spread the tomato sauce evenly.

    Let it rise in a warm place for at least three hours.

    Preheat the oven to 392°F in conventional (static) mode and bake the pizza for about 30 minutes.

    Open the oven, add the sliced onions and the flaked tuna and continue baking for another 5 minutes.

    The whole-wheat pizza with onions and tuna is ready to be served.
