Albacore with Almonds and Soy Sauce.
A main dish for lovers of Japanese food, but using our local ingredients except for soy sauce. Easy to make and, when accompanied by vegetables of your choice, it will be a real boost for our health.
Today I will use the albacore, a fish from our Mediterranean, not to be confused with tuna, as it does not reach large sizes. There are several types of albacore including the bonitofish, the pesantone or the bullet tuna. They all belong to the same family and differ only in terms of fat or blood content.
In fact, the bonitofish has lighter flesh but is a bit fattier, yet all have a high omega-3 content, which is good for our health.

  • 1.32 lbs tuna (albacore or bonito in fillets)
  • 1.06 cups almonds (or chopped)
  • 2.82 tbsp extra virgin olive oil (or rice oil)
  • 3.38 tbsp soy sauce
  • 0.42 cups water
  • 1 tbsp flour

Preparation: Albacore with Almonds and Soy Sauce

  • Fillet the fish, for this I recommend watching the video at the top of the recipe.

    If you can’t, you can ask your trusted fishmonger.

  • Each fillet should be cut into 2 cm cubes.

    Coarsely chop the almonds or use chopped ones, and bread each cube well

  • In a bowl, combine the flour, water, and soy sauce, mix until lumps disappear and set aside.

    In a non-stick pan, pour the oil and bring it to high heat.

  • Brown the cubes for about 1 minute, very quickly, as albacore requires a short cooking time, then add the bowl mixture, cook for just 2 minutes, and as soon as it starts boiling again, turn off the heat and serve immediately with vegetables of your choice.

  • Do not add salt, as the soy sauce already provides flavor.
