Steps

Let’s go to the kitchen

  • Peel the pumpkin, remove the seeds, and cut it into cubes.

  • In a frying pan, pour the olive oil, add the large pieces of garlic so you can easily remove them later, and let it flavor for a few minutes,

  • Add the pumpkin and salt to the pan, cover with a lid, lower the heat, and let it cook until the pumpkin softens.

  • Once done, blend the mixture with Parmesan cheese, pepper, and roast herbs.
    Spread the mixture until it cools down; if you want to speed up the process, put it in the fridge.

  • After the time has passed, take everything out of the fridge, including the roll of puff pastry.
    Set aside 6 teaspoons of pumpkin cream for the decoration of the roses.

  • Carefully spread the puff pastry on a work surface, and with a knife make 5 cuts as shown in the photo, obtaining 6 strips

  • Spread the pumpkin mixture on each strip.

  • Fold each strip in half over itself.

  • With light pressure, close the ends of each strip.

  • With scissors, make small cuts 1 cm apart without going all the way down.

  • Place the parchment paper on a baking tray and preheat the static oven to 350°F, and as soon as it’s hot,
    transfer the pumpkin roses to the baking tray and in a small bowl beat the egg yolk with the milk.

  • In the center of each rose, place a teaspoon of pumpkin cream that we had set aside, and a small cube of bacon.

  • Bake in the oven at mid-height for about 18-20 minutes, depending on the oven.
