Aromatic Pork Loin for Thermomix.
A classic family Sunday dish.
Today I present it to you in a very aromatic version using all the spices of the Mediterranean scrub.
This recipe will make the meat very tender and not dry, enriched by the vegetable cream with which we will accompany it. It is also a very light and nutritious dish that we can also eat cold.

Ingredients
- 2 leaves bay leaf
- as needed lemon zest (only the yellow part)
- 3 sprigs rosemary
- 2 leaves sage
- 2 cloves garlic
- 1.76 lbs pork loin
- as needed salt
- as needed pepper
- 1.76 oz onion
- 0.42 cup white wine
- 2 tbsp extra virgin olive oil
- 0.63 cup vegetable broth
- 0.35 oz cornstarch (Or FiberPasta flour)
- 3 sprigs lemon thyme
- 7.05 oz carrots (Or pumpkin)
- 7.05 oz zucchini

Preparation of Aromatic Pork Loin for Thermomix
Place the lemon zest, bay leaves, sage, 1 clove of garlic, and lemon thyme in the bowl, chop: 10 sec, speed 8.
Gather on the bottom with the spatula.
Transfer to a bowl
Place the pork loin on the cutting board and make cuts with the tip of a knife. Peel the garlic and cut it lengthwise. Insert it into each cut.
Then massage the meat with the Mediterranean herb mixture.
Finally, take a rosemary sprig, place it on the pork loin, and tie the meat with kitchen twine.
Make several turns.
Now put the onion and 1 clove of garlic in the bowl, chop 5 sec. speed 7 then gather with the spatula on the bottom.
Pour in the provided extra virgin olive oil, and flavor for 3 min. speed 1.
Add the blade cover. (I tried without the blade cover, but the knife group didn’t turn)
Place the meat on top, drizzle with wine, pour the vegetable broth, and add the sliced carrots and zucchini.

Cook for 30 min. at 212°F speed 1.
After the time has elapsed, with the help of the spatula and a fork, turn the meat and…
continue cooking for another 30 min. at 212°F speed 1.
At the end of cooking, remove the meat but leave the vegetables in the bowl, add the cornstarch, and cook for 3 min. at 212°F speed 1 without the measuring cup.
Once the preparation is finished, and the meat has cooled, slice it.
Arrange it on a plate with the sauce on top.
