Today, I will offer you a light version, without sugar or fats.
To sweeten it, I will use a little sweetener and then the many bananas inside create a softness on the palate that takes you to ecstasy.
Great for breakfast, but also for a snack.

Ingredients
- 3 Bananas
- Lemon (grated peel)
- 3 Eggs
- 1 2/3 cups All-purpose flour (Low G.I. flour)
- 1 packet Vanillin
- 1 packet Baking powder
- 2/3 cup Yogurt (of choice)
- 1 pinch Salt
- 1/4 cup Sweetener (stevia or 120 erythritol)

- 1 Stand Mixer or Bimby
- Pan 9.5-inch springform
Preparation of Banana Cake without Sugar or Fats
First, turn on the oven in static mode, at 356°F.
Grate the peel of a lemon and collect the juice,
peel the bananas, slice them, and put them in a bowl
Put in the stand mixer, the lemon peel, the sweetener, and the eggs and start to whip.
If using the Bimby, you can set it for 4 minutes at 98.6°F speed 3 with the butterfly.
Otherwise, with other tools or by hand, whip until the mixture appears soft and frothy.
when the mixture is whipped, add the flour little by little and continue to whip.
Add the vanillin, the yogurt, the salt, and when these ingredients are well mixed, add the baking powder.
Once the mixture appears smooth and homogeneous, turn off the stand mixer
With the Bimby, keep the butterfly but reduce the speed to 2, for about 3 minutes, incorporating the various ingredients as above.
Butter and flour a springform pan.

Pour the rest of the mixture, level it well, and complete with the rest of the other 2 bananas
Insert the pan in a preheated oven at 356°F for about 30/35 minutes, after this time, do the toothpick test, if it comes out dry you can take the cake out, otherwise continue baking for a few more minutes.
When the cake is ready, take it out and let it cool.
Serve at room temperature.
