The broccoli harvest season is approaching, and I have devised a preserve that helps us in hectic moments when we come home tired from work and don’t want to eat processed food.
This vegan and lactose-free ready sauce can be frozen or put in sterilized jars and stored for up to 3 months.
Surprising results from a study found that broccoli contains a molecule capable of turning off an enzyme responsible for the growth of some cancer forms, including breast and prostate cancers.
Just 100 grams, for example, provide a full supply, equal to 150 percent of the amount needed by our body, of vitamin C. There are also important minerals, from zinc to iron, and vitamins B and K.

  • 1.1 lbs broccoli (florets)
  • 1/3 cup extra virgin olive oil
  • 1 pinch chili pepper (optional)
  • 2.3 cups water
  • 1 tsp salt

Preparation of Broccoli Ready Sauce Preserve

  • Wash the broccoli and..

  • Separate the leaves from the florets.

    With the leaves, you can proceed as you like, today we will use only the florets.

  • In a pot, put the water and salt.

    When it boils, add the broccoli and let them cook for 15 minutes.

  • Then drain and transfer into a bowl.

    Chop the almonds and add them to the broccoli along with the oil.

  • If you like, you can also add the chili pepper.

    Blend with the immersion blender until you get a smooth cream.

  • Distribute the broccoli pesto in the previously sterilized jars.

  • Now put some water in the pot, place a dish towel on the bottom, and place the jars.

    Between one jar and another, place the ends of another dish towel so that they don’t bump into each other.

  • Bring to a boil and boil for 30 minutes. Then turn off the heat and let cool in the same pot.

  • If instead, you want to simply freeze them, skip this option.

  • When you need a jar, you can put the pesto directly on the pasta, or enrich it with garlic, oil, and chili pepper or with spreadable cheese.

  • Finally, you can use it on bruschetta or croutons. I made it with casarecce.
