Cannellini Bean Minestrone and Broccoli Soup.

It is very cold today and I quickly prepared this delicious soup enriched with broccoli.
The cannellini beans, when cooked, give a nice creaminess to the dish that you can enjoy with croutons or pasta. You can add some chili pepper if you like. I enriched the dish with my homemade vegetable stock cube, Click here to see how I make it.
I used canned beans, but if you want, you can use dried ones and pre-cook them yourself. Also, you can use any type of beans with this recipe.

  • 1.4 oz onion
  • 3.5 oz carrots
  • 2 stalks celery
  • 2 tsp stock cube (vegetable)
  • as needed water
  • 1 chili pepper (optional)
  • 10.5 oz rustic tomato purée

Steps

Cannellini Bean Minestrone and Broccoli Soup

  • Drain the beans from their canning liquid but do not throw it away, whether you used canned, precooked, or boiled your own beans.
    Peel the carrots and celery, and chop the onion. Clean and trim the broccoli.

  • Roughly chop the carrots, celery, and onion as if for a minestrone. Place them in a pot with olive oil, and let them sauté for about 3 minutes, stirring occasionally.

  • After the time has passed, add the tomato purée and 200 ml of the beans’ canning liquid or regular water; the liquid part should be at least 200 ml. Stir and…

    Let it cook for about 20 minutes, checking if more liquid is needed.

  • Put the celery, onion, and carrot pieces in the Bimby jug and roughly chop for 10 seconds at speed 4, then check and mix with the spatula; if they are still too large, repeat the operation until they have the consistency of minestrone.
    Add the olive oil and let it sauté at 230°F (110°C) speed 1 reverse.

  • After the time, add the tomato purée, the previously precooked or canned beans, their canning liquid, and the broccoli florets.
    Let it cook for about 20 minutes at 212°F (100°C) reverse speed spoon, with the basket on top, checking through the hole if more liquid is needed.

Storage and Tips

Cannellini Bean Minestrone and Broccoli Soup.

This soup can be stored in the fridge for up to 3 days and in the freezer for up to 3 months.

Tips: This dish also pairs well with pasta, rice, or grains.
If you want to add them, I recommend doing so halfway through cooking so they cook together and become risotto-style.

In such a case, you need to add about twice the weight of pasta, rice, or grains in water, for both traditional and Bimby cooking.
