Cappuccino Pancakes with Diet Mousse

Cappuccino pancakes with diet mousse are a perfect breakfast idea to kickstart your day.

I made them with a ricotta and yogurt mousse and a sprinkle of pistachios and almonds to give the dish an extra protein boost.
For those with a sweet tooth, they can also be enriched with chocolate chips.
Easy and quick to prepare, they are so good that you won’t be able to resist them!
