- 2 eggs
- 3.5 oz flour
- 1 clove garlic (minced)
- 1 bunch chopped parsley
- 2 tbsps grated Parmesan (or Pecorino)
- 2 tsps turmeric powder
- as needed salt

- 1 tsp sweet paprika
- as needed seed oil (for frying only)
- 7 oz Greek yogurt
- 1 tsp lemon juice
- 2 tsps curry powder
- 2 tbsps extra virgin olive oil
- as needed pepper

Steps
Let’s go into the kitchen to prepare
Grate the carrots and transfer them to a bowl along with all the other ingredients
Mix everything to create a batter as shown in the photo.
Prepare a plate with some flour spread underneath and with moist hands form slightly flattened fritters about 1 to 1.5 inches in diameter.
My favorite is in the air fryer: Place a sheet of paper suitable for cooking mode at the bottom of the drawer of your air fryer, arrange the carrot fritters, spray the oil and cook for 4 minutes at 356°F after preheating, then flip the carrot fritters and continue cooking for another 2 minutes.
Turn on the oven to 356°F static, arrange the fritters on a baking sheet with parchment paper and bake for 10 minutes at 356°F
Heat the oil in a non-stick pan and only when it is very hot place the fritters, frying them for 3 minutes per side, then place them on absorbent paper and serve both cases hot.
Yogurt sauce: take half of the Greek yogurt and in a small bowl mix the yogurt, pepper, lemon juice, and 1 tablespoon of extra virgin olive oil, mix and serve.
For the curry sauce, put the remaining yogurt in a small bowl with the other tablespoon of extra virgin olive oil, pepper, and curry, mix and serve
