Cherry compote recipe in a pot and with the Bimby
It differs from jam and preserves because it has a low sugar content, a very homogeneous consistency, and can be blended or not. Ideal for spreading.
The compote can be used in the same manner as jams and preserves: at breakfast on bread and rusks, with cheese, to garnish cakes and desserts.
First, the cherries must be very ripe, otherwise the compote will be tart. Prefer organically grown cherries.
As a preservative, we will use the apple, which contains ‘pectin’ as a natural preservative, and to thicken, we will use pectin 3:1.
I prefer to use both, apple and pectin, also to use less sweetener and lighten the strong flavor of cherries, so a more delicate compote will result.
Remember that for every kg of fruit used for the compote, you will need about 300 grams of apples and a packet of pectin 3:1 and the filtered juice of one lemon
Finally, the compote is usually richer in fruit and lower in sugar.

- 10.6 oz apples (with peel)
- 2 tbsp lemon juice
- Half glass water
- 1 packet pectin (fruttapec 3:1)
- 12.3 oz erythritol (or 10.6 oz sugar)

Steps
Preliminaries for both cooking in a pot and with the Bimby. Sterilize the jars
Wash the cherries, remove the stems and pits, and collect them in a bowl, along with the filtered lemon juice.
Take the apples without peeling them and cut them in half, remove the core, and cut them into pieces, then add them to the bowl with the cherries,
, then drench everything with water and mix very well, add the pectin 3:1, and the sweetener.
Let it macerate for about 1 hour, so the fruit releases its natural juices.
After this maceration time, take the fruit mixture and pour it into a saucepan with all its juice. Cook the compote over very low heat for about 40 minutes, remembering to stir occasionally.
Watch for when it starts to boil, because it will foam and rise to the brim of the pot. Stir continuously for three minutes, then lower the heat, without stopping stirring.
To see if it’s ready, put a spoonful on a saucer and turn it upside down; if it doesn’t drip, it’s ready. After the time has elapsed, decide if you want a compote without pieces, take an immersion blender and blend the jam until smooth and creamy
If, on the other hand, you prefer pieces of fruit, avoid blending the jam. Now pour the still-boiling cherry compote into sterilized glass jars, and close them immediately. Turn the jars upside down, and let them cool completely to create a vacuum seal,
Store the jars in a cool, dry place
In the bowl, combine cherries and apple chunks, pectin, then lemon juice. And the sweetener.
Place the Varoma container (without lid) instead of the measuring cup, cook: 45 min/203°F/speed 1.
To see if it’s ready, put a spoonful on a saucer and turn it upside down; if it doesn’t drip, it’s ready
After the time has elapsed, decide if you want a compote without pieces blend with the measuring cup on speed 5 for 15 seconds. Otherwise, nothing.
Pour into sanitized jars. Close the jars and to preserve them. Turn the jars upside down and let them cool completely
then store the cherry compote in a cool, dry place
Storage
Cherry compote without sugar or sweetener
The cherry compote without sugar can be used immediately, for example in making pies or for breakfast or a snack, spread on bread.
You can store it for up to 6 months in a cool, dry place.
Once the jar is opened, it should be stored in the fridge and consumed within 2 weeks.
