Preparation


  • Clean and fillet the fish, cut the fillets into pieces and then, using a cleaver, chop them, do not blend them, otherwise the meatballs will become mushy.

  • Peel the shallot and slice it to obtain circles about 0.2 inches thick.

  • Prepare the seasoned breadcrumbs with salt, pepper, grated Pecorino Romano, chopped parsley, and garlic. Mix and divide it into 2 parts.

  • In half of the breadcrumbs, add the diced provolone, eggs, and fish mince. Mix.

  • Form meatballs about 0.8 inches in diameter and then roll them in the remaining breadcrumbs we set aside.
