  • 1.3 lbs pumpkin (net weight)
  • 3 tbsps extra virgin olive oil
  • 3 cloves garlic
  • 1 sprig rosemary
  • to taste roast spices
  • to taste salt
  • to taste pepper

Steps

To make

  • Take the chicken, cut it into pieces, put it in a bowl with roast spices. I make them at home, click here to see how I make them.

    Mix well with the spices, and let the chicken rest just long enough to prepare the other ingredients.

  • Meanwhile, take a pumpkin, remove the skin, and also remove the seeds.
    Cut it into cubes of about 1/2 inch, and set them aside.

  • Then take the pan and put in half of the oil you have, a whole clove of garlic, and the rosemary sprig.

    Heat it slightly, if you want, at this point, you could also add a small cup of water if you don’t want to fry it at all.

  • Put the chicken pieces and brown them on both sides until they appear slightly golden.

    This step seals the meat and keeps its juiciness.

    In the same pan, without washing it, add the other garlic cloves and the rest of the oil.

  • Heat and add the pumpkin, with a pinch of salt and pepper, cover and let it stew for about 5 or 6 minutes

  • At this point, add the chicken pieces, mix, and let it cook until the pumpkin is completely tender.

    Depending on your taste, as some prefer it al dente, others a little softer.

  • If you like, this is an additional option for those who do not have hyperglycemia issues: you can add a tablespoon of balsamic vinegar and let it evaporate, but I leave this to your choice. You could also add a bit of balsamic vinegar glaze, but only for those without glycemic index concerns.
    Now that everything is cooked, transfer the chicken to a serving dish.
