Chicken bites with pumpkin is a diet recipe.
It is autumn, and pumpkins are coming into season.
With pumpkins, we have great benefits. Pumpkin, besides being a vegetable
rich in carotene necessary for the production of vitamin A, performs protective functions for eyesight and skin.
Moreover, pumpkin contains many minerals: calcium, phosphorus, potassium, iron, and is also an excellent source of fibers important for our intestines.
Consider that even for individuals suffering from diabetes, doses are recommended up to 7 oz per day for men and 5.3 oz per day for women.
Even those with cholesterol issues can safely eat pumpkin, as regular consumption helps maintain low blood pressure levels.

Chicken bites with pumpkin
Tools
What we need to make
- 1 Knife
- 1 Cutting board
- 1 Pan
- 2 Bowls
Steps
To make
Take the chicken, cut it into pieces, put it in a bowl with roast spices. I make them at home, click here to see how I make them.
Mix well with the spices, and let the chicken rest just long enough to prepare the other ingredients.
Meanwhile, take a pumpkin, remove the skin, and also remove the seeds.
Cut it into cubes of about 1/2 inch, and set them aside.
Then take the pan and put in half of the oil you have, a whole clove of garlic, and the rosemary sprig.
Heat it slightly, if you want, at this point, you could also add a small cup of water if you don’t want to fry it at all.
Put the chicken pieces and brown them on both sides until they appear slightly golden.
This step seals the meat and keeps its juiciness.
Now, as soon as they whiten,
Remove the chicken pieces from the pan and set them aside.
In the same pan, without washing it, add the other garlic cloves and the rest of the oil.
Heat and add the pumpkin, with a pinch of salt and pepper, cover and let it stew for about 5 or 6 minutes
At this point, add the chicken pieces, mix, and let it cook until the pumpkin is completely tender.
Depending on your taste, as some prefer it al dente, others a little softer.
If you like, this is an additional option for those who do not have hyperglycemia issues: you can add a tablespoon of balsamic vinegar and let it evaporate, but I leave this to your choice. You could also add a bit of balsamic vinegar glaze, but only for those without glycemic index concerns.
Now that everything is cooked, transfer the chicken to a serving dish.
Chicken bites with pumpkin can be stored in the refrigerator for up to two days or in the freezer for up to three months
