  • 2 eggs
  • 1 1/4 cup breadcrumbs (Sicilian style see recipe)
  • 2 cups cherry tomatoes
  • 2 tbsp extra virgin olive oil
  • 3.5 oz mozzarella

  • Knife
  • Parchment paper

Preparation

Let’s go to the kitchen to prepare

  • Ask your butcher to cut slightly thick chicken breast slices; otherwise, the oven-baked cutlets may turn out dry and tough.

  • Prepare the Sicilian-style seasoned breadcrumbs in a bowl following this recipe, click here. Use bread that is not too dry; otherwise, the breadcrumbs become too fine and dry.

  • Beat the eggs, and one by one dip the slices

  • Roll them in the breadcrumbs on both sides.

  • Press firmly to make them adhere.

  • Complete all the slices.

    Meanwhile, dice the mozzarella and cherry tomatoes, and season both with salt, pepper, and oregano.

  • OVEN COOKING.

    Place all the slices on the baking tray with parchment paper and distribute the diced cherry tomatoes over each slice.

    At this point, do not add the mozzarella; we will add it 5 minutes before they are done and with the oven off.

  • Bake for 15 minutes under the grill setting at 392°F. Once the time is up, turn off the oven and distribute the mozzarella over each slice. Place back in the turned-off oven for 5 minutes.

  • Place the cutlets in the air fryer basket with suitable paper underneath, spray oil over them, and top each cutlet with a bit of tomatoes.

  • Cook for 8 minutes at 392°F after preheating.

    Once the time is up, add the cheese and continue cooking at 392°F for another 2 minutes.
