Chicken with Sicilian long zucchini. With today’s dish, I take you on a tour around my Sicily, introducing you to this spectacular vegetable with multiple qualities. The Sicilian long zucchini. This type of vegetable combats water retention and is an ally of the urinary tract and intestines; in fact, it also fights constipation.
They are recommended for weaning infants. Just two thin slices of green zucchini placed on the eyes can combat dark circles and soothe tired eyes.
Paired with chicken fillet, this makes a complete and healthy dish rich in all nutrients.

Ingredients for preparing Chicken with Sicilian Long Zucchini
- 1.76 lbs trombetta zucchini (or Sicilian long)
- 7 oz potatoes
- 10.5 oz tomato purée (chunky)
- 1.32 lbs chicken breast (sliced or cubed)
- 1 tsp broth cube (vegetable)
- 0.1 cup extra virgin olive oil
- 1.76 oz onion
- to taste basil
- to taste roast seasonings
- to taste pepper

Preparation of Chicken with Sicilian Long Zucchini
Preparation in a pan
Spread the chicken fillets and season them with the roast seasonings. To see how I prepare them, click here
This is the Sicilian long zucchini. It is different from other zucchinis not only because of its length but also because it must be peeled with a peeler before use.
After peeling, cut it into slices about 0.2 inches thick.
Roughly slice the onion,
Peel the potatoes and cut them into chunks. Immerse them in water until needed.
Wash a lot of basil thoroughly. In this recipe, a large amount is needed both during cooking and afterward.
Now we can proceed: Put the onion in the pan, along with the oil, and a small cup of water. Let it go for 2 minutes, then add the chicken fillets, and let them color on both sides.
Then remove them from the heat and set them aside.
In the pan with the onion add the zucchini slices, the potato chunks,

A glass of water, a good amount of torn basil leaves with your hands, not with a knife, and…
Cover and let cook for about 15 minutes.
Once the time is up, uncover and touch the potatoes. If they are almost cooked, we can proceed, otherwise continue cooking. Be careful; they should be “almost cooked.”
Now you can add the chicken fillets, lower the flame, and let the sauce thicken a bit.
Let cool slightly and sprinkle the dish with more basil. The Chicken with Sicilian Long Zucchini is ready to be enjoyed.
Sprinkle the chicken fillets with seasonings, and place them between the tray and the varoma container. Close the lid and set aside.
Peel the zucchini with a peeler, remove the ends, and cut it into slices 0.2 inches wide. Do the same with the potatoes, and cut them into cubes,
Peel the onion, cut it into pieces, and together with half the basil, put it in the Bimby cup, close the measuring cup, and run for 10 seconds at speed 8. Collect with the spatula.
Add 2 tablespoons of evo oil, close the measuring cup, and cook for 3 minutes at 248°F speed 1.
Put the zucchini, potatoes, tomato purée, 100 gr of water in the Bimby cup, add the broth cube, salt, close with the lid and overlap the varoma.
Cook for 20 varoma reverse spoon speed.
