  • 1 tbsp stevia (or 1/3 cup of sugar or 1/3 cup of erythritol)
  • 1/2 cup plain yogurt (or Greek)
  • 1 1/4 cups all-purpose flour (or fiber or cereal flour)
  • 7 tbsp milk
  • 1 pinch ground cinnamon
  • 1 packet baking powder
  • 3 tbsp lemon juice
  • as needed lemon zest (from 1 organic lemon)
  • 2 eggs

Preparation: Creamy and Diet Apple Cake

  • First, preheat the oven to 356°F (180°C) static.

    Line with parchment paper or grease and flour the pan.

    Grate the lemon zest and then squeeze the lemon and strain the juice.

  • Sift the flour with the baking powder.

    Peel the apples, but leave 1 whole with the peel, and slice the rest as thinly as possible with a mandoline, then transfer them to a bowl and drizzle with the lemon juice.

  • In the bowl of your Bimby or stand mixer (but a bowl with beaters works too), place the eggs with the sugar. If using the Bimby, add the butterfly and whip for 5 min. speed 3.

    With other tools, it will take about 8 minutes until the mixture is frothy and pale.

  • At this point, while the machines continue to work, gradually add the yogurt, a pinch of ground cinnamon, the grated lemon zest, and the milk, then spoon in the flour with the baking powder that you had sifted earlier.
