Traditional recipe and Thermomix
These delicious cupcakes are perfect for celebrating special occasions. I made them for a unicorn-themed birthday party for two little girls, but you can make them for any occasion and theme.
They consist of simple cupcakes and are then decorated with marshmallow mascarpone cream and colorful sprinkles.
But the decorations can also vary according to your taste.

- 1 1/3 cups all-purpose flour
- 1/3 cup sugar
- 3 oz vegetable oil
- Half packet baking powder
- 1 packet vanillin
- 1 pinch salt
- 2 eggs
- 10 1/2 oz mascarpone
- 1/4 cup whipping cream
- 2/3 cup powdered sugar
- 3 1/2 oz marshmallows (and colorful sprinkles of choice)
- as needed food coloring (of choice)

- 1 Electric whisk or Thermomix
- 1 Pastry bag with striped nozzle
- 10 Cupcake liners for cupcakes
Steps
Cupcakes for Birthdays and Baby Showers
Preheat the oven to 350°F, and place the cupcake liners on the tray
In a bowl or stand mixer combine flour, sugar, oil, a teaspoon of baking powder, 1 packet of vanillin, and a pinch of salt and mix.

Mix with the whisks until you obtain a homogeneous mixture.
Then incorporate the eggs one by one, and continue to mix for 3 or 4 minutes
Now that we have the mixture, fill the cupcake liners with 3/4 of the mixture
bake at 350°F for 20 minutes. After the time has elapsed, open the oven door and let the cupcakes cool.
At your choice, you can add a chocolate candy to the center of each cupcake
Chop the white chocolate, transfer it to a bowl and melt it in the microwave with 1/4 cup of cream.
If you don’t have a microwave, you can melt it in a double boiler.
In a bowl, whip the mascarpone with 3 tablespoons of powdered sugar. Once it is sufficiently whipped, gradually incorporate the white chocolate into the mascarpone, always with the whisks in motion
When you have finished the chocolate and the mixture is homogeneous, add the food coloring drop by drop, adjusting to the shade you desire.
If you want to create cupcakes for communions or weddings, you can leave the frosting white.
Now fill a pastry bag with a striped nozzle and decorate the cupcakes as desired.

Place the butterfly, and pour the eggs with the sugar and whip for 4 min. speed 3.
Add through the hole, with the butterfly in motion at speed 3, and everything little by little: the oil, the yeast, the vanillin, and a pinch of salt.
Mix until you get a homogeneous mixture.
Transfer the mixture into the liners and fill them 3/4
then bake at 350°F for 20 minutes. After the time has elapsed, open the oven door and let the cupcakes cool.
If desired, you can insert a chocolate candy in the center
or chocolate chips
Place the white chocolate pieces in the bowl and chop for 10 sec speed 5. Pour 1/4 cup of cream and melt everything for 3 min. at 212°F speed 1. Check if it has melted well otherwise repeat the operation.
Transfer to a bowl and keep warm.
Without washing the bowl, whip the mascarpone with 3 tablespoons of powdered sugar. 4 min. speed 4.
Place the butterfly and start the Thermomix at speed 4 and gradually incorporate the white chocolate into the mascarpone always in motion
When you have finished the chocolate, continue for 2 min at speed 4, adding the food coloring drop by drop, adjusting to the shade you desire.
If you want to create cupcakes for communions or weddings, you can leave the frosting white.
