  • 1.8 oz carrot
  • 2.1 oz celery
  • 4.23 cups beef broth
  • 5.3 oz pickled vegetables
  • 5.6 oz canned tuna in oil (drained)
  • 1 leaf bay leaf
  • 1 sprig rosemary
  • 3 leaves sage
  • 2 tbsp salted capers (desalted)
  • 7.05 oz Greek yogurt 0% fat
  • 2 egg yolks (hard-boiled)
  • 1.8 oz green olives in brine (pitted)

Recipe in pot

  • Start by tying the meat like a bundle, this helps to keep the meat juices inside.

  • Secure between the twine, the bay leaf, sage, and rosemary.

  • In a pot not too large, add a drizzle of extra virgin olive oil.

    Chop the onion, carrot, and celery into large pieces.

    Sauté them for a few minutes.

  • Add the meat, and brown it on all sides..

  • As soon as the meat is white, add the broth, cover the pot and cook for at least 1 hour, turning occasionally.

  • Meanwhile, prepare the tuna sauce: chop the parsley

  • and the cans of tuna drained from the preservation oil and the hard-boiled yolks.

  • Blend everything

  • At this point add the Greek yogurt, and mix everything well.

    Let it rest in the fridge until the veal has cooled

  • Once the veal has cooled, slice it thinly, and arrange it on a serving plate.

  • Serve cold or at room temperature with the tuna sauce on top and decorate with capers and a few tufts of tuna cream.

  • Collect the mixture with the spatula and transfer it to a bowl, now incorporate the Greek yogurt and mix with a spatula, until you get a smooth and homogeneous mixture. Let it rest in the fridge until the veal has cooled
